My mom Gloria has been making these cream cheese and jam Christmas cookies since I was a little girl.
I think the Polish name for them is Kolaczkis. We would wait all year for the Holidays to roll around so we could enjoy these little treats. I had the pleasure of making them this year with my mom. We enjoyed a lovely morning of cookie baking and coffee.
Makes about 5 dozen cookies
Ingredients:
2 sticks of salted butter, softened
2 ½ cups flour
8 oz cream cheese, softened
1 (15-18 oz jar) of Jam or Preserve of your choice (do not use jelly)
You will also need:
Wax paper
Rolling pin
Optional-Silicone Cookie Sheet liner (Makes for easy cleanup)
Directions:
Preheat oven to 375 degrees
In a bowl with electric mixer cream together cream cheese and butter until fluffy then with a wooden spoon add flour slowly to incorporate. Add about a half of a cup at a time. This will form a dough. Once dough is formed remove with hands and form into a small log. Wrap in plastic wrap and refrigerate for about 15-20 minutes. If you have a Kitchen Aid mixer you can use it with the paddle blade to create the dough.
Once dough has chilled cut about a 2-inch slice away and roll out in between two sheets of wax paper that have been lightly dusted with flour. You may need to turn the wax paper over as you work and peel it away from the dough making sure it isn’t sticking. Roll out dough so it is slightly thinner than a pie-crust. Peel away the top layer of wax paper and using a regular wine glass or drinking glass cut out circles in the dough. Remove one circle at a time and fill with about ¼ teaspoon of jam. Fold two ends of the dough over, pinch the dough closed and fold down. You can see this in the photo below. Place on cookie sheet and back for about 20 minutes until lightly golden, not brown. Jam may run out of cookies a little. Remove and allow cookies to cool on a wire rack. Once cookies are cool sprinkle with powdered sugar.

My fave too. My recipe is a little different, not as much flour and unsalted butter. They are smaller too. Very light. My family cant wait to get to them. Merry Christmas.

I have had these cookies at Christmas time for 40 yrs. I made them with my mom as I grew up. Till I took over makin them about 10 yrs ago. We folded them the same. I began making them like thumb print cookies. I’ld make 500 in one day…. We used the brand of perserves called SOLO . I only found it at Publics. But only had the 4 flavores. There is a country store near me. The brand of perserves I use is “Dutch Kettle”. This years flavors were. Blueberry, bosenberry, black cherry, red rasberry, peach, apricot, and almond. Who knows what I’ll make next year. Yes. Everyone I made these for expects them every year… I only make them at Christmas.. Well, Merry Christmas and I’m glad I popped in..

Do you have a recipe for Florentine Cookies .. I tried this one recipe from the Food Network and they just wouldn’t flatten out .. even so, one of my friends LOVED them .. I noticed that FN took the recipe off after Christmas .. It used orange zest and corn syrup .. my friend is a TYPE II diabetic .. wonder if the corn syrup could be substituted ? Loved the crunchyness of them .. he loved the chocolate topping and his wife loved that he loved them

I have made them in the past and they are pretty tricky. Here is a recipe like the ones I have made in the past and it does a great job of showing step by step. You can use honey in place of the corn syrup if that will help your friend. Here is the link.

WOW! My great aunts, grandmother & great grandmother on my mom’s side used to make these every year. YUM! My grandfather was a master baker but I don’t think he used to make these and could not find them in his old recipes. They have all passed on and I never got the recipe but can tell from the way these look they are the same. I am soooo happy. Going to make some with my mom!

Ahh!! My mom always makes these cookies (along with 1238725 others) around Christmas, except she fills them with a mixture of apple butter and finely chopped walnuts. So good!
