Pomegranate Granita – Made With POM Wonderful Pomegranate Juice

POM Wonderful pomegranate juice is something that I always have in my refrigerator. I usually drink it with a splash of club soda or water. One day I had the idea to turn it into a refreshing dessert.  Since it’s a new year and the holidays are over I am trying to stay away from fatty, high calorie desserts, so this was the perfect solution.

If you have never tried this juice you should.  I have only made it with the regular pomegranate but there are other flavors like blueberry pomegranate too that would probably be amazing.  Actually any juice will work, but this one has the perfect tart and sweet flavor, besides POM wonderful is so good for you.

Pomegranates are high in antioxidants and other vitamins. They have been known to help prevent heart disease as well as some cancers, like breast and prostate.  How can you go wrong with something good for you and great tasting?

Ingredients:

  • 2 cups POM Wonderful pomegranate juice
  • 1 cup orange juice
  • 1/2  cup of sugar
  • zest of one lemon
  • zest of one orange

Directions:

In small saucepan heat the sugar and the orange juice for about 3 minutes stirring to allow sugar to dissolve. Pour the POM juice and the orange juice in a shallow glass baking dish and add the lemon and orange zest. Mix well.

Cover and freeze for about 1 hour. Remove from freezer and stir with a fork. Freeze for another hour and then scrape with a fork again until large crystals form.

Freeze again and repeat. Once you are ready to serve it give it a good scrape with a fork to form large crystals.  Scoop into a dessert glass and serve.

I like it with a little whip cream but it’s great plain too.
