Simple Summer Berry Cobbler Recipe

Simple Blueberry Cobbler

This is an easy dessert to make for a yummy treat. Everyone loves this one with some homemade whipped cream or ice cream. You can even substitute peaches or mix different types of berries with this recipe. (not a low fat treat! enjoy on your “treat day”)

Ingredients:

4 Cups fresh blueberries

1/3 Cup sugar

Juice of 1 lemon

1/2 Teaspoon cinnamon

2 Tablespoons cornstarch

1 Package of Betty Crocker Sugar Cookie Mix

1 Stick of softened butter plus 3 tablespoons

1 Egg

1 Teaspoon almond extract (if you don’t like almond, you can add vanilla)

Cooking Spray

Ice cream or whipped cream for topping

Directions:

Spray an 8 x 10 inch baking dish (or one close to that size) with cooking spray. Pour in the berries.  Sprinkle the sugar, lemon juice, cinnamon, and cornstarch on top of berries and mix lightly with a spoon to coat the berries.  Dot the top of the berries with the 3 tablespoons of butter.

In a large bowl, mix the sugar cookie mix with 1 stick of softened butter, 1 egg and the almond extract.  Mix well with your hands to form a soft dough.  With your hands, grab a golf ball-sized portion of dough and press into a pancake. Place dough on top of berries and repeat. There is no need to cover the berries completely so you don’t have to be neat about this.  You may have a little dough left over.

Bake in a 375-degree oven for 25-30 minutes until golden brown. Let cool for 10-15 minutes before serving.

I like to serve this with homemade whipped cream or ice cream.

Cook’s notes:

I make this ahead of time and place in the refrigerator covered with plastic wrap until I am ready to bake it. When dinner is almost over I remove the plastic wrap and bake in the oven.

If you are making this to bring to a party, you can bake it ahead of time and warm it in the oven for a few minutes before serving.

Enjoy.  Seriously.  This is good stuff!

I’m new to the world of “cooking” as the only thing I ever knew how to make was a boiled egg and PB&J sandwiches, now I’m getting my hands into mixing, baking, etc and I can’t wait to make this dessert this weekend for my cheat meal dessert!! Thank you Sugar for the recipe!!

I made this fabulous cobbler while you were in Europe for a July 4th party. I had to improvise because I was in the process of moving so most of my kitchen was already packed up. I had no measuring cup nor did I have anything to strain the berries in. I made use of what was availble and it came out beautiful. When we arrived at the party, my son jumped out of his car seat and stepped right in the middle of my gorgeous berry creation. The wax paper covering saved it for consumption but it looked like a disaster. It was delicious anyway! :)

My friend, Nancy, made this for my birthday … it was so good !! They didn’t have any candles so they put sparklers on it .. how funny !! They set off the smoke alarm!! A very fond memory .. I loved the sugar cookie topping .. crunchy … sooo good!! Thanks for sharing it with us :o )
